旨澄 醤油ラーメン

Original Soy Sauce Ramen

Clear, yet long on the finish. Hokkaido kombu, dried shiitake, dried tomato and roasted vegetables, each drawn out at its own temperature.

Four Japanese soy sauces blended in-house — including Yuasa, the birthplace of soy sauce — with shio-koji beneath for a fermented roundness. Thin noodles.

澄んでいるのに、余韻が長い一杯。
北海道産昆布、九州産干し椎茸、ドライトマト、焼き野菜を段階的に抽出し、濁りのない清湯に。
湯浅の伝統醤油を含む4種の醤油をブレンドした「かえし」に、塩こうじを隠し味として重ねています。

Rich Sesame Ramen

Rich, but never heavy. The same base broth, with a sesame kaeshi of ground sesame and Kyoto white miso.

Mikawa mirin, Okinawan black sugar and soy milk make it creamy with no dairy — a rich bowl you can finish to the last drop. Thick noodles with seasonal vegetables.

練りごま・すりごまと京都の老舗の白味噌を合わせた「ごまかえし」に、三河みりんと沖縄県産黒糖を重ね、豆乳でつないでいます。

Japanese vegetables are the star

京野菜・国産野菜。
We visit growers and buy directly from them where we can — Kujo negi from Kyoto, sweet onions from Awaji Island. Every vegetable is chosen for where it comes from, and comes with its own season and story.

Traditional seasonings

伝統調味料へのこだわり。
Yuasa soy sauce from Wakayama, the birthplace of soy sauce; mirin from Mikawa; white miso from long-established Kyoto makers. Seasonings built on generations of craft, and richer for it.

The wisdom of fermentation

発酵の知恵。
Vinegar, koji, miso — fermentation runs through the whole kitchen, deepening flavour without animal products. Our homemade fermented vinegar drinks are aged one to two months, and change with each season.
